How do we track fruit intakes?
All parcels of fruit that travel through the winemaking process remain as integral units, whether they be contract parcels or not.

From the first point of contact between Flying Fish Cove and our customers, each separate parcel of fruit is identified and tagged with a unique code that follows it throughout the entire winemaking process. Each individual code also incorporates information about the vineyard, block or winery name, along with the variety, region and vintage of that fruit. This information is mandatory for Label Integrity Program requirements.

Our sophisticated software allows for detailed tracking of each batch, logging all processes, additions, laboratory analysis, and volumes along the way. The same software automatically tracks and modifies changes in LIP if any blending is required detailed reports are available at any time during the winemaking process.

In physical terms, Flying Fish Cove has the facility to keep all batches separate from crushing right through fermentation, maturation, fining, filtration and preparation for bottling. A dedicated winemaker ensures that each parcel of fruit/wine is treated individually, to the specifications of our customer. So, even during busy periods, there is a high degree of attention and care.
