Which winestyle options are used?

The desired wine style is addressed early in the winemaking process during initial contractual discussions, since winestyle requirements may affect the contract charges that apply.

Often, our  customers have ideas about the wine style they are after. Decisions about fermentation style, oak treatment, storage, fining and blending can be made at the appropriate times during the process.

However, with a wealth of winemaking experience at our fingertips as  well as a dedicated viticulturalist, our winemakers can draw on  solid, viticulture/winemaking consultation, to assess parcels of fruit for quality and treatment options. Decisions regarding the best treatment of the wine parcels are then a joint exercise between our customers and our winemaking team.  

Initially, the winemaking specifications are outlined in an extent of services document that forms part of the processing contract. Charges are clearly stated, and the services that form part of the processing charge are listed. Any changes or increase to services can be negotiated during the process. If these fall outside the initial contract, a schedule of charges apply, also part of the contract, clearly outlines the charges for all processes available to our customers.
