Senior Winemaker / Site Manager - Simon Ding |
 After finishing an apprenticeship in Metalwork in 1993 Simon traveled to Great Britain on a working holiday. Over the next three years he traveled and worked throughout the world in various jobs. It was during this time that Simon worked in the Restaraunt and Bar industry and gained an appreciation for good food and fine wine.
On returning to Australia in 1996 Simon took up a position with Fermoy Estate in Margaret River as a cellar hand. Soon after starting work he undertook a Bachelor of Science degree, specializing in Wine Science via a correspondence mode of study whilst working full time in the cellar. After six years of work and study he completed his degree in Wine Science.
Since completing his degree, Simon has worked in the Margaret River region as a Winemaker for several award winning wineries.
Recently, Simon joined the team at Flying Fish Cove as the Senior Winemaker/Site Manager. He is excited about the new position and looks forward to contributing to the ongoing success of Flying Fish Cove.
